1. Using the broad side of a knife, smash the lemongrass and ginger on a cutting board. Place lemongrass and ginger in a large saucepan and add broth, jalapeƱos, and lime zest. Bring to a boil over high heat, reduce to a simmer, cover, and cook for 15 minutes. Strain into a bowl and discard solids.

2. Return broth to the pan and add pineapple, mushrooms, tomato, bell pepper, fish sauce, and sugar. Bring to a simmer and cook, uncovered, for 5 minutes. Add shrimp and cook until they are pink and cooked through, 2 to 3 minutes. Remove from heat and stir in lime juice, green onions, and cilantro just before serving.
